National Pancake Day!

Evidently, Shrove Tuesday - which is today - is also known as Pancake Day in many english-speaking countries. According to a strangely repetitive Wikipedia entry:

"In the United Kingdom and Ireland, Shrove Tuesday is often known colloquially as Pancake Day or Pancake Tuesday. In the UK and for those who follow the Anglican tradition elsewhere it is known as Pancake Day or Pancake Tuesday; in Ireland and other countries following the Catholic tradition it is known as Pancake Tuesday or Pancake Day."

I guess it bears repeating because Pancake Day is an awesome day. To differentiate ourselves from the pack (as we are wont to do), here in the U.S. we call it National Pancake Day and celebrate by eating free pancakes at IHOP. I will likely not visit the local IHOP for my free pancakes, choosing instead to observe Pancake Day on multiple, random dates throughout the year, both at home and in restaurants.

In honor of National Pancake Day, here is a love note to the best pancakes restaurant in Seattle - Cyndy's House of Pancakes:

Thank you for being located on Aurora near a palm reader, a pawn shop, a payday loan store, and a discount golf outlet!
Thank you for almost always having a booth by the window available so I can sit and look at the palm reader and pawn shop and also see all the emergency vehicles go by, which they always do, at least once during my meal!
Thank you for having the most awesome interior decoration, circa the 1970s vinyl/wood panel craze, complete with Captain Kirk chairs at the bar and dragon kites on the ceiling!
Thank you for having the best servers of any restaurant anywhere ever! Seriously, they've all been there forever and yet are cheerful and chatty every single time I'm there, even after the Sunday church-crowd swarms.
Thank you for having delicious pancakes in a variety of sizes and styles, including the crepe roll-ups which are my favorite!
Thank you for also having the best chicken-fried steak in Seattle although you should rethink your gravy choice and offer it standard with country gravy like they do in the south (instead of the gelatinous brown turkey gravy you currently serve with it, making me order the country gravy and pay extra)!
Thank you for not getting sold to that sleezy guy who wanted to turn you into a strip club!
